Crockpot Buffalo Chicken Salad



It's been a little while since I've posted a recipe and recipe video, and what better way to come back with a bang than with a Paleo/Whole 30 version of a Buffalo Chicken Salad!!


Though I don't adhere to a specific diet because I'm all about listening to my own bodies needs and feeding it according to what it really, truly needs, I do have some guidelines I try to stand by. One of those guidelines is to try and stick to the GOOD oils (Olive Oil/EVOO, Coconut Oil or Avocado Oil) rather than the INFLAMMATORY one's (canola, safflower, sunflower, soybean, etc). Yes, maybe I could make my own ranch dressing, but sometimes we just don't have time to make everything from scratch and for that I'm SUPER grateful that Primal Kitchen makes a Ranch that I trust. As far as wing sauce, I was RAISED on Frank's Red Hot Sauce and find their wing sauce super tasty... but it's made with canola oil (yuck). I recently discovered The New Primal Noble Made Medium Buffalo Sauce and..... your girl is happy about it.


Spring means one step in winter and one step in summer. Our bodies usually are still craving something somewhat warming (winter) at the same time as cleansing (spring/summer). This salad here does the trick for both!! With the heat from the buffalo sauce, we're still getting that warming feeling while the leafy greens and cilantro are helping us to start to lighten our dishes and cleanse our liver, both of which our bodies start to crave in spring. According to Chinese medicine, spring is ruled by the liver and gallbladder, so any extra love we can give to those through our diet and lifestyle is beneficial this time of year.


So, here it is:


Crockpot Buffalo Chicken Salad

Cook Time: 3 to 6 hours // Serves: 4

Directions:

  1. Place chicken in crock pot. Smother in wing sauce. Drizzle with ranch dressing. Cook on either low for 5 - 6 hours or high for 3 - 4 hours.

  2. When crockpot timer goes off, shred chicken using two forks. Once chicken is shredded nicely, mix well with remaining drippings in crockpot.

  3. For salad: put leafy greens and cilantro in bowl. Top with red onion, chopped celery, chopped cucumbers, cut up baby tomatoes, avocado, a lump of buffalo chicken (served hot or cold). Dress with ranch dressing and serve!! Great for lunches all week.
